PORRIDGE FINGERS

Now, these little breakfast treats can be cooked in either the oven or the microwave which is a bonus. Personally, for reasons of speed, I always opt for the microwave cooking option. However, I find that by cooking them in the microwave, it doesn’t look the most attractive breakfast. The hungry toddler waiting for them though loves them!!

Ingredients:

3 tbsp traditional porridge oats (not instant)
3 tbsp whole milk

Method:

• Mix the oats and milk in a bowl, and press the mixture into the bottom of a shallow bowl
• Leave to soak for at least 1o mins
• Cook in the microwave for 2 mins (or in the oven for 15 mins at 190°C/375°F/Gas Mark 5)

Variations:

Stir in some raisins before you allow the mixture to “rest” for a sweeter twist
